We are looking to love some Bacon Cheddar Corn Muffins ’round these parts. What’s not to love, anyway? I mean, it’s cornbread, and cheese, and BACON. All in a cute little muffin form. It’s amazing, I’ll tell you what. Fluffy, crumbly, flavorful, and suuuuper easy to make. They are the perfect accompaniment to breakfast, lunch, dinner, brunch, linder, and all the other meals with weird names that people invent because it’s not a traditional meal time. Word.
You all know how much I love bacon. From my Bacon Cheddar Pretzel Rolls, Bacon Wrapped Chicken Skewers, and Cheesy Bacon Egg Bake, it’s my heart. Nom. And I am kind of obsessed with Farmland® bacon, because it’s thick, and it cooks up so well! I always bake my bacon in the oven at 400 degrees, and every batch that I’ve made so far has come out spectacularly! No sudden burning, no half-cooked, half-limp pieces. OK, so that might say more about my oven, but really, it means the bacon is evenly sliced, so it cooks the same from end to end. That’s important!
