It’s muh birfday yo! I’m getting older over here, but that doesn’t mean I’m not getting my noms on with these decadently easy Spicy Southwestern Cheese Fries!
It’s like a one pan smorgasbord of delish, and I’m like YES PLZ BIRTHDAY GIRL.
It’s so easy, you guys. Like, seriously. We cooked up a rack of Smithfield Southwest Style Peppercorn Dry Seasoned Ribs the other day, and I just used the leftovers to make these Texas-inspired cheese fries of amazingness.
Ready in 30 minutes. BAM.
What I love about these ribs is that they embody the essence of a BBQ restaurant-quality meal, but at home instead! I’ve cooked them on the grill, as well as in the oven, and it takes less than two hours to get juicy, tender, mouth-wateringly delicious ribs. And even a rib-cooking-failure like me can get it done and look like a pro. Cause seriously, I rocked these out.

Such a glutton, this girl is. But it’s my birthday so I get a pass. Cause cheese fries. And ribs. And ribs IN the cheese fries!

Basically, what we’ve going on here is fries, cheese, shredded/diced leftover pork ribs, green onion, cilantro, serrano peppers, and habañero if you’re nasty.
I dunno why I have Janet Jackson in my head. Get out of here, you.
I gave the fries a fun coat of spices as well, to give the whole dish a more spicy, southwest flavor. We wants all the flavors.
Speeeeeeaking of flavors. Did you know that Smithfield not only has the Spicy Southwest Peppercorn, but also Sweet & Smoky Kansas City BBQ, Sweet & Spicy Memphis BBQ, and Sweet & Tangy Carolina BBQ?!? I tried the Kansas City BBQ and was in heaven, FYI.
I feel like I can make tons of fun cheese fries with the leftovers of all of these. SO MANY CHOICES. Smithfield has your back, just like I do. So let’s get cookin’, shall we?
Ingredients
- 20 oz Frozen French Fries thin or shoestring variety
- 1 Tbsp Kosher Salt
- 2 tsp Garlic Powder
- 1 ½ tsp Chili Powder
- 1 tsp Paprika
- 2 C Leftover Smithfield Spicy Southwest Peppercorn Dry Seasoned Ribs warmed
- 2 C Shredded Cheese
- ¼ C Green Onion sliced
- ¼ C Cilantro roughly torn
- 1 Serrano Pepper sliced
- 1 Habañero sliced
Instructions
- Cook frozen fries as directed on package. While they are cooking, mix together the salt, garlic powder, chili powder, and paprika. Sprinkle over fries when done cooking, and toss lightly to coat.
- Heat oven to 450 degrees. Chop or shred the leftover rib meat and sprinkle over the fries. Add the cheese, then green onions. Place in oven for 10 minutes, or until cheese is completely melted.
- Top with cilantro, Serrano and Habañero peppers and serve with a side of ranch dressing.

This dish has made my day! I used to think that pregnancy cravings were just an excuse to eat like a piggy, and look at me now, drooling over my phone screan ?
I love fries, and l love cheese, put them together and you have heaven on a plate. Needless to say, l’ll go and make some now!
