It’s kind of like Thanksgiving married Christmas and this dinner is their gift to the world.
OK, so maybe I sound a little pompous. That’s mostly in jest, but in all seriousness, this meal is literally the 💣.
And it is literally super simple as well. I cooked this whole meal on a single sheet pan.
Do you see that amazing crust? That color? Can you imagine the smell of it roasting, with fresh herbs releasing their herb-y goodness into the meat?
I’m drooling over here just thinking about it.
In all honesty, the first time I tried this herbed mayo was when I made the Thanksgiving turkey in San Antonio in 2015. It was my husband who found the recipe here, and I instantly fell in love.
That turkey was the best turkey I had ever had, regardless of the fact that Rudy poked a hole in the roasting pan and nearly set our apartment on fire. That is a story for another day, I’m afraid.
But anyway! I thought to myself, wouldn’t it taste amazing with a Smithfield Original Recipe Marinated Fresh Pork Loin Filet?
YES! Yes, it would.
And now I have brought this herbed mayonnaise roasted pork loin here for you to enjoy, because seriously, amazing.

Now, how about we make this herbed mayonnaise roasted pork loin??
- Preheat oven to 425 degrees. Remove pork loin from packaging, then pat dry with a paper towel.
- Remove herbs from stems, roughly chop, then mix with the mayonnaise, stirring until combined. Rub mixture all over pork loin, then generously season with salt and pepper. Place in the middle of a large sheet pan.
- In a large bowl, toss together the frozen green beans, almonds, cranberries, and olive oil. Spread the mixture around the pork loin in the sheet pan, then sprinkle with salt and pepper.
- Place in the oven and allow to roast for 30 minutes, or until a meat thermometer registers 150 degrees from the center of the thickest portion of meat. Remove from oven and set on a cutting board to rest for 5 minutes. Slice into thin strips and serve with the roasted green beans. Enjoy.
