You guys. It’s Pumpkin Spice Latte season. And we’re still in August! But you know what? I don’t mind. At all. Since I no longer live in the scorching desert, I am excited for fall. Seriously, like crazy excited. Yay cooler temperatures and jeans and sweatshirts and bonfires and pretty leaves and and and and and omg yes, please, fall. Woo!
Like I said, crazy excited.
This year, Starbucks is rolling out their infamous Pumpkin Spice Latte on the 25th, and I thought, in the spirit of awesomeness, I would share my very own pumpkin spice latte recipe, which is different from most other recipes I’ve seen, and frankly, far closer to the original than any other recipe.
And I did mention, it’s complete with homemade pumpkin spice marshmallows? You guys are going to go insane for this, it is so good.
What makes this recipe so unique is that instead of taking your ready-made coffee and adding pumpkin puree and pumpkin pie spice, I made a syrup in the classic coffeehouse fashion. By making a syrup, you’re guaranteed to have a stash you can use for far longer than the shelf life of an open can of pumpkin puree. And coming in at 33 calories per tablespoon, it’s not a bad bet either!
I love making this syrup because it is so fragrant; it makes my house smell like fall. Another big score, fo realz. All you do is combine the sugar and water on medium heat, and once the sugar is completely dissolved, add pumpkin puree and my special spice mixture and allow it to boil for a good 5-7 minutes, then let it cool down completely. Done and done.
I like to add roughly two tablespoons to my cup of joe, then top it off with some hot, frothy milk and my homemade pumpkin spice marshmallows!
You know, I made some marshmallows the other day, and it was crazy. I’ve said crazy a lot in this post, but it’s totally true.
And, for the record, most everything going around me is crazy. Just ask Angela, and Laura. It’s Crazy Central. But anyway, back to these marshmallows. I have no idea what I did wrong, but all of a sudden I ended up with taffy instead of marshmallow. It was so sticky and it pulled exactly like taffy, it made me wish I had a taffy-pulling machine. You know, the kind you see at county fairs? It would have been awesome.
That fluffy goodness is hard to resist. You know, when you aren’t accidentally making taffy. I may or may not have been licking the spoon. Yum.
I marbled these babies with about ⅓ cup of my pumpkin spice latte syrup, to take the awesomeness to the nth degree. So delicious. Pop these in your pumpkin spice latte and tell me otherwise, I dare you.
Pumpkin Spice Latte with Pumpkin Spice Marshmallows
Ingredients
For the Pumpkin Spice Syrup
For the Pumpkin Spice Marshmallows
- 3 Packets Unflavored Gelatin .75oz total
- 1 C Water
- 2 C Sugar
- ½ C Light Corn Syrup
- ½ tsp Kosher Salt
- ½ tsp Vanilla
- ⅓ C Pumpkin Spice Syrup
For the Pumpkin Spice Latte
- 2 Tbsp Pumpkin Spice Syrup
- 1 C Fresh Black Coffee
- ⅓ C 2% Milk Hot and Frothy
- Pumpkin Spice Marshmallows for Garnish
Instructions
For the Pumpkin Spice Syrup
- Combine the water and sugar in small saucepan on medium heat. Once the sugar has completely dissolved, add the pumpkin puree, cinnamon, ginger, nutmeg, and allspice and boil for 5 minutes, stirring frequently. Remove from heat and allow to cool completely.
For the Pumpkin Spice Marshmallows
- In a stand mixer bowl with whisk attachment, add ½ cup water and sprinkle the gelatin over the water. Allow to sit to fully absorb the water.
- In a medium saucepan over high heat combine the sugar, ½ cup water, light corn syrup, and salt. Bring to a rolling boil and allow to boil for one minute, stirring constantly.
- Turn the mixer on to low and let is mix the gelatin a couple times before slowly adding the hot sugar mixture. Once completely incorporated, turn the mixer up to medium-high and allow to beat for about 7-10 minutes, or until the mixture has doubled in size and is white and fluffy, scraping the sides frequently to keep it from spilling over.
- Pour the mixture into a buttered 9x13 pan, then drizzle with the pumpkin spice syrup and drag a knife through it in both horizontal and vertical strokes to create a marbled appearance. Allow to sit, uncovered, for a minimum of 4 hours, or for best results, overnight. Dust with powdered sugar and slice with a buttered knife.
For the Pumpkin Spice Latte
- In a large coffee mug, add the pumpkin spice syrup, followed by the fresh black coffee. Slowly mix in the hot milk and top with milk froth and diced marshmallow cubes. Enjoy!
