Apple Cinnamon Muffins

  • Preheat oven to 425 degrees. Line a 12 cup muffin pan with cupcake liners, or grease. Set aside.
  • In a large mixing bowl, beat the eggs until combines, then add the sugar and mix until dissolved. Mix in the oil and vanilla until thoroughly combined.
  • In a separate bowl, stir together the flour, cinnamon, nutmeg, salt, baking powder, and baking soda.
  • Add the flour mixture to the batter in batches, alternating with the greek yogurt, mixing until just combined.
  • Gently stir in the diced apples, then divide the batter between 12 muffin cups. Press 1 cup's worth of Apple Jacks into the tops of the batter, then place in the oven and back for 15-20 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.
  • Remove muffins from tin, then mix together the powdered sugar, milk, and cinnamon and pour over muffins. Top with the remaining cup of Apple Jacks and enjoy!
