Herbed Mayonnaise Roasted Pork Loin

Ingredients

  • 1 Smithfield Original Recipe Marinated Fresh Pork Loin Filet
  • 2 Fresh Sage Leaves
  • 2 Fresh Thyme Stems
  • 1 Sprig Rosemary
  • 1 Sprig Oregano
  • ½ C Mayonnaise
  • Kosher Salt to taste
  • Cracked Black Pepper to taste
  • 1 12 oz Bag Frozen Green Beans
  • C Slivered Almonds
  • ½ C Dried Cranberries
  • 2 Tbsp Olive Oil

Instructions

  • Preheat oven to 425 degrees. Remove pork loin from packaging, then pat dry with a paper towel.
  • Remove herbs from stems, roughly chop, then mix with the mayonnaise, stirring until combined. Rub mixture all over pork loin, then generously season with salt and pepper. Place in the middle of a large sheet pan.
  • In a large bowl, toss together the frozen green beans, almonds, cranberries, and olive oil. Spread the mixture around the pork loin in the sheet pan, then sprinkle with salt and pepper.
  • Place in the oven and allow to roast for 30 minutes, or until a meat thermometer registers 150 degrees from the center of the thickest portion of meat. Remove from oven and set on a cutting board to rest for 5 minutes. Slice into thin strips and serve with the roasted green beans. Enjoy.
