Ingredients

FOR THE FILLING:

  • 8 ounces vegan cream cheese softened
  • ¾ cup granulated sugar
  • 1 tablespoons cornstarch
  • 1 ½ cups fresh mixed berries

  • ½ cup all-purpose flour
  • ½ cup packed brown sugar
  • ½ teaspoon cinnamon
  • 4 tablespoons vegan butter melted

Instructions

  • Preheat oven to 350 degrees and coat the bottom and sides of an 8-inch springform pan with cooking spray. Set aside.
  • Make the filling: In a large bowl, beat vegan cream cheese and sugar on medium-high speed until smooth and creamy, then add the cornstarch and beat until well combined. Set aside.
  • Make the cake: In a separate large bowl, whisk together flour, salt, baking powder and baking soda until well combined. In another large bowl beat vegan butter, granulated and brown sugars on medium-high speed for 2-3 minutes, or until light and fluffy. Stir in apple cider vinegar, oatmilk yogurt alternative, and vanilla until combined. Stir dry ingredients into wet ingredients until batter is just combined. Batter will be thick.
  • Spread ⅔ of batter into bottom of prepared pan. Spread cream cheese filling over top and sprinkle with fresh berries. Top with dollops of remaining ⅓ batter and spread gently with a spatula to avoid crushing berries.
  • Make the streusel topping: In a small bowl, stir flour, brown sugar, cinnamon and melted vegan butter until well combined and mixture looks like wet sand. Sprinkle evenly over top of cake.
  • Bake 75-90 minutes or until top of cake is a deep golden brown and a toothpick inserted in the center comes out clean. Cool completely in pan on a cooling rack, then loosen edges with a paring knife before removing from the pan. Enjoy.
