Cream together butter and sugars. Beat in the eggs, one at a time, then mix in the vanilla.
In a separate bowl, combine flour, salt and baking soda. Gradually beat into butter/sugar mixture. Add chocolate chips and carefully stir.
Spoon out dough one tablespoon at a time, press into a bowl shape with thumb, then add ½ tsp of cookie butter, cover with the dough and smooth out into a ball. Place on a baking sheet and bake for 12-15 minutes, or until the edges are just barely brown.
For The Truffles
Place 15 cookies into a plastic bag and break into small pieces, then dump into a bowl with the cream cheese and cookie butter. Mix ingredients together by hand until smooth, then form into 1 ½ inch diameter balls. Place on baking sheet and freeze for 30 minutes.
Place chocolate in a small pot on low heat and melt until smooth, stirring frequently. Take cookie balls out of the freezer and dip in the chocolate until coated, removing from the pot with a fork and placing on waxed paper or a cooling rack until solid.
