Normally, I am not much of a leftovers girl. I try to make only enough for the single meal and that’s about it. So, when challenged to whip up something equally amazing as my carnitas with the leftover pork, I thought this was a challenge I must accept! Bring on those leftovers, because we’re got an amazingly simple Cuban Sandwich Recipe all up in this biznatch that will literally blow.your.mind.

Ingredients
For the Avocado Mayo
- ¾ C Mayonnaise
- 1 Small Avocado pitted and diced
- â…“ C Fresh Cilantro roughly chopped
- Kosher Salt and Pepper to taste
For the Cuban Sandwiches
- 3 C Leftover Pork Carnitas
- 12 oz Honey Ham thin sliced
- 6 Slices Provolone Cheese
- 6 Tbsp Dijon Mustard
- 6 Kosher Dill Pickles sandwich stacker variety
- 6 Slider Rolls
Instructions
- Preheat oven to 250 degrees. In a small bowl, add the mayo, diced avocado, and cilantro. Mash together until smooth, then season with salt and pepper to taste.
- Slice the slider rolls in half, then add a tablespoon of the dijon mustard to the bottom bun, followed by a slice of provolone cheese. Add the ham, then top with a heaping ½ cup of the leftover pork carnitas. Top with a pickle spear.
- Spread a generous layer of the avocado mayo on the top bun, then place on top of the sandwich. Places sandwiches on a baking sheet and bake for 15 minutes, or until the meats are hot and the cheese is melted. Serve immediately.

Normally Cuban sandwiches are pressed, but I wanted to simplify the recipe by just throwing some sliders in the oven to heat through, since not everyone has a sandwich press readily available. To be perfectly honest, I don’t own one myself, though I can improvise with a few different tools I do have on hand. This Cuban sandwich recipe is like a regular sandwich on overdrive. It’s the opposite of boring. The antithesis of plain. It’s a monument to flavor that comes together with such quickness it should be declared illegal!
OK, so I might be going a bit overboard, but you get the picture.
The standard basis of a Cuban sandwich is pork, ham, cheese, mustard, and pickles. I further delved into the realm of flavor by whipping up a delicious avocado mayo, and swapping plain yellow mustard for dijon. It’s a powerhouse sandwich, in a small slider form. Perfect for lunch, dinner, or any meal in between, just serve with some crunchy chips and enjoy!
