Summer is quickly approaching, at least here in South Texas, where it’s been nearing 90 degrees for over a week already! It’s time to gear up for amazing summer nights, family gatherings and fun parties, am I right? So in the spirit of all the fun that is about to be had, I thought it would be awesome to share some of my favorite cocktails and even a mocktail, so you can be the most amazing host there has ever been!

The Best Ever Red Sangria | asimplepantry.comHave I told you all that my husband and I had a mostly DIY wedding? Minus my dress (which was a bridesmaid dress, ha), and a few other minor things, we did it all ourselves, and that included the food and drinks. I’m talking nearly 50 pounds of chicken for chicken fajitas, a case of avocados for guacamole, and 10 gallons worth of the most amazing red sangria around. We are a family that likes to drink, and we like a good drink, so when it came to making the red sangria, we made sure to get the good stuff. I love using the Roscato Rosso Dolce because it’s just slightly sparkling, and just slightly sweet, so it’s perfect for a red sangria! And if there is one thing you cannot forget, it’s brandy. All the best sangrias have brandy. Don’t skip the brandy. I also love to add fresh cut limes and blackberries, because they complement the flavors of the Roscato and are, of course, delicious to munch on as you’re drinking. I always feel better drinking when I’m eating some fruit too, ha!


The Best Ever Red Sangria | asimplepantry.comI love to let my tastebuds travel, and as a member of a Hispanic family, I sure do enjoy going to Mexico, which is where the Paloma hails. It’s a super simple but delicious cocktail, with only two ingredients, but a whole lot of flavor! In general, you use tequila and a grapefruit soda, but I like to have a little extra fun, so I make mine with Joia Grapefruit, Chamomile and Cardamom Soda, and garnish with some lime for a truly refreshing drink, which is perfect for gatherings in hot weather, or a Sunday Brunch! Move on over, Mimosa, you’ve been replaced!

The Best Ever Mango Slush Punch | asimplepantry.comThis drink is almost like a fizzy smoothie, just not as thick, and tons more fun to party with. I used fresh mangoes, as well as Ceres Mango Fruit Juice, and Ginger Ale. It’s a party in your mouth, and everyone is invited! Or not, cause that might be weird. They have party in their own mouths, thank you very much. Make sure you have enough low ball glasses for everyone, or you’ll be in trouble, for sure. You might need a punch bowl and ladle too, cause this recipe serves a crowd!

Red Sangria, Paloma, Mango Slush Punch

Ingredients

For the Red Sangria

  • 1 Bottle Roscato Rosso Dolce
  • 1 C Brandy
  • 1 C Orange Juice
  • 3 Oranges sliced
  • 5 Limes sliced
  • 2 C Strawberries quartered
  • 1 C Blackberries

For the Paloma

  • 8 oz Silver Tequila
  • 4 Bottles Joia Grapefruit Chamomile and Cardamom Soda
  • 1 Lime quartered

For the Mango Slush Punch

  • 4 Mangoes diced
  • 2 Cartons Ceres Mango Fruit Juice
  • 4 C Ice
  • 3 Bottles Ginger Ale

Instructions

For the Red Sangria

  • In a large pitcher combine the Roscato, brandy and orange juice. Add the fruit, then allow to sit for a few hours for the flavors to mix. Serve over ice with fresh fruit.

For the Paloma

  • In four tall glasses, add 2 oz of tequila per glass, then fill the rest of the glass with the grapefruit soda and garnish with the lime wedge.

For the Mango Slush Punch

  • In a large blender, add the ice, fresh mango and mango juice. Puree until smooth, then add to a large punch bowl. Pour the ginger ale over the top and serve with a ladle into glasses garnished with fresh raspberries.

Notes

The Red Sangria and Paloma recipes are written to serve 4 people, whereas the Mango Slush Punch will serve up to 16 people.
