Summer is brutal here in Phoenix. It’s not even June and we’ve entertained 100+ degree weather several times. The air conditioner is at a constant state of despair over the amount of work it has to do to keep our home cool, and the bills that go along with it…make my brain hurt. When it comes to meals, you can bet I’ll do anything and everything to avoid turning on the stove or oven; I don’t like heating up the house! With the crazy heat, I also don’t like to leave my house, which sometimes means I have to get creative with my meals and entertain easy summer recipes with whatever I have in my pantry. It was on one such occasion that I created what I lovingly call my pantry bruschetta, which I made using Hunt’s Diced Tomatoes and dried basil.
I was actually very surprised by how good it tasted, but it makes sense since Hunt’s uses a flashsteam method to peel their tomatoes, rather than chemicals, so you know you aren’t tasting anything but delicious ripe tomatoes. My pantry bruschetta has become a new lazy day favorite, and it would do wonders for your summer cooking as well!
Ingredients
- 1 Loaf French Baguette
- ¼ C Olive Oil
- 1 14.5 oz Can Hunt's Diced Tomatoes
- ½ C Crumbled Feta Cheese
- 2 Tbsp Dried Basil
- 2 tsp Garlic Powder
- Kosher Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350 degrees. Slice the baguette into thin pieces and layer them across a cookie sheet lined with aluminum foil. Brush the tops with olive oil, then bake for 25 minutes, or until they begin to brown.
- Drain the can of tomatoes very well, then combine in a bowl with the feta, basil, garlic powder, salt and pepper and mix gently.
- Spoon (or scoop) onto toasted baguette slices and enjoy!

Yes, yes, yes, I did say to use the oven for this recipe! But, I’m only including it if you’re so inclined towards having fancy crisp bread in abundance. In the middle of summer, I am more inclined to use the toaster turned on its side, but it takes awhile to get all that bread toasted, so I sometimes just skip it and dip it. And by dip it I mean in the olive oil, and then in the bruschetta. Yum. I also really enjoy drizzling some balsamic reduction over the top of it, which you can make yourself if you want, by checking out my recipe!
