New Mexican Style Chicken Tacos

Disclaimer: Frontera did not ask me to review their product, nor did anyone else. This is simply a recipe I liked and wanted to share. So enjoy.

So the other week I picked up a packet of Frontera New Mexico Taco Skillet Sauce from Safeway.

I just randomly saw it in the store and it looked yummy so I bought it. If you have a Safeway you can get it, or you can follow the link above to purchase it (because I don’t know any other carriers).
Before I started making the tacos, I diced up half a head of cabbage and tossed it in a bowl with 1Tbsp. olive oil, juice from half of one lime, ¼C diced cilantro, about 1Tbsp. kosher salt and a couple dashes of pepper. Makes a wonderful citrus slaw.
I popped that baby in the fridge while I prepared the tacos.
I basically just followed the directions on the back of the package. Dice chicken into ½in. cubes and set aside. Slice up a small onion (I used purple, I do for pretty much everything) into thin pieces and dice. Cook in a saute pan with olive oil until the onion browns, then transfer to a plate for use later. Throw the chicken into the pan and brown for about 3 minutes, then add the sauce and onions and simmer until heated through, or a good five minutes.
Then, simply dish into some warmed up corn tortillas and top with cheese and cilantro and plop it on a plate with the citrus slaw and enjoy!
The smokey flavor from the roasted tomatoes is really rich, and the chilies give the sauce just the right amount of punch. Slow and building. Delish.
