Living in a mixed race house has its advantages. My husband learns about what it’s like being a Minnesotan and a Swede, and I learn about what it’s like to be a South Texan and Mexican. The kids end up getting the best of both worlds in the process as we teach them the finer points of our cultures while sharing the struggles our families have gone through to get where they are now. They learn to appreciate all cultures in the process, and find a want to learn more about others, because history is so interesting! Over the past years, I’ve done a lot of dabbling in the cultural aspects of food, and am a huge fan of the best Mexican recipes. But that doesn’t mean I always stick to the straight-up traditional stuff. I like to Tex-Mex it up, and even Minnesota-Mex (yes, this is a thing, especially when you are from a rural town that has a large population of migrant workers) it up, so we end up with a lot of flavor-infused dishes that are so popular with the family we make them time and time again.
