In my small town, none of the grocers carry za’atar, so I had to do some research and get to whipping this blend together.

You’re going to love it. It’s a blend of toasted sesame seeds, thyme, cumin, and sumac. Sumac is another spice that can be difficult to locate (I was surprised to find it!), so I recommend this one if you can’t find it locally.

Ingredients

For the Za'atar Seasoning

  • 6 tbsp ground sumac
  • 6 tbsp dried thyme
  • 6 tbsp sesame seeds toasted
  • 3 tbsp kosher salt
  • 1 tbsp ground cumin

For the Roasted Carrots and Kale Salad

  • 16-20 thin carrots
  • 2 tbsp canola oil
  • 1 ½ teaspoons za'atar seasoning
  • kosher salt to taste
  • 1 bunch kale
  • ½ cup toasted cashews
  • juice of 1 lemon
  • â…“ cup extra virgin olive oil
  • 4 garlic cloves
  • ½ teaspoon chili flakes
  • 1 cup greek yogurt
  • 1 teaspoon cumin

Instructions

For the Za'atar Seasoning

  • Combine the sumac, thyme, sesame seeds, kosher salt, and cumin, in an air-tight jar and gently shake to combine. Keep sealed in a cool, dry place when not in use.

For the Roasted Carrots and Kale Salad

  • Follow the prompts with the Hestan Cue app and cookware system.
