So, right now I am basically in hiding. At least, it feels that way. Here in San Antonio, we have an excessive heat warning, with highs around 105, and heat indexes nearing 115. Ew. With that awful humidity, it’s rather oppressive. I much prefer the 105-115 of Phoenix, AZ, because at least there isn’t humidity. Hate humidity. Needless to say, I have all the blinds drawn, the TV off, and pretty much everything else as well, to conserve energy and keep the AC running strong. These Limeade Popsicles, tho.
Even if it turns into a furnace in here, I’m just gonna enjoy some limeade popsicle goodness. It’s what’s for dinner.
OK, not really. But maybe. Cause nooooooooo stove, no.
These are so simple to make you guys. Like seriously simple. All you need is some limes, some sugar, and a big pile of water. You need to make a little simple syrup for this, which is essentially just one cup sugar and one cup water in a pot to simmer until dissolved. You can store the leftovers for another popsicle recipe, because you’re only going to use half for these limeade popsicles.

Ingredients
- ยฝ C Fresh Lime Juice
- ยฝ C Simple Syrup
- 2 C Water
- Lime Slices for garnish (optional)
Instructions
- Stir together the lime juice, simple syrup, and water until fully incorporated. Insert lime slices into molds if using, then add the limeade mixture to fill each mold. Freeze for at least four hours. Enjoy!

EWWW 110 degree’s?! It’s 88 in Seattle and I have been bitching constantly to all my friends about how I’m melting. I think we should both hibernate with a bucket of these popsicles until Fall. Deal?
