Guacamole Wasted

If there is one thing we know around here, it’s how to have a good time. More often that not, these good times involve a lot of homemade guacamole and a lot of tequila, and always a lot of laughter. Lately I’ve really enjoyed some intense games of Spades, in which I am never my husband’s partner, and take great pleasure in beating him roundly. It’s been nice having so many members of Rudy’s family around here in Texas, because it was getting a little lonely in Arizona after my grandparents moved away. Now the girls have a ton of cousins their age to play with, and while they are all playing, I get to enjoy some much needed adult time!

Right now I am loving José Cuervo’s new Iced Teagarita, which is basically a twisted margarita, using my favorite classic José Cuervo Tequila (shots, anyone?!), blended with premium orange liqueur and refreshing iced tea. This seems like a no-brainer for any Texan, since margaritas and iced tea are staple drinks in this state; I can’t believe they haven’t been combined sooner! And since they are America’s favorite ready-to-serve margarita, you can pick up your own bottle in 750ml for $12.99 (MRP) or 1.75L for $19.99 (MRP). I’m stocking up for sure, because there is still a lot of summer left, which means there is plenty of partying left to do.

One of my favorite things to do at a gathering is get completely and utterly guacamole wasted. Seriously, it’s a thing. I love me some homemade guacamole. Pile it in a dish, give me a bag of chips and I’ll just go to town until I’m pretty much licking the dish clean. Mine. All mine. But I guess I can share it with you too.

Homemade Guacamole

Ingredients

  • 3 Ripe Avocado
  • 1 Large Firm Tomato
  • ½ Large Red Onion
  • 1 Serrano Pepper
  • 1 Heaping Tbsp. Mayonnaise
  • 4-5 Dashes Worcestershire Sauce
  • Juice from ½ Lime
  • 1 tsp. Garlic Powder
  • Pinch of Kosher Salt
  • Dash of Black Pepper
  • Handful of Fresh Cilantro

Instructions

  • Cut open the avocado, remove the pit, then scoop out the flesh and place in a medium bowl. Mash the avocado with a fork, spoon, or potato smasher until it's broken down into small chunks.
  • Dice the tomato, red onion and serrano pepper, then mix in with the avocado.
  • Add the mayonnaise, Worcestershire sauce, lime juice, and garlic powder and combine until thoroughly mixed.
  • Add a pinch of salt and a dash of pepper and mix well, adjusting the seasoning to taste.
  • Tear the leaves of a handful of cilantro and sprinkle into the guacamole, leaving a few leaves on top as garnish. Serve with tortilla chips and enjoy!

This recipe has been a hit for years now, and is even a staple with my family in Minnesota, who were introduced to it when we moved there back in the summer of 2008. In fact, Rudy whipped up about a gallon or more of it for our wedding in 2009. I think it disappeared faster than anything else we had out (minus the Cuervo, of course)!
