Bruschetta Mozzarella Bites | asimplepantry.comNine times out of ten, when I am working on an amazing recipe to share with you guys, I have at least one kid pestering me relentlessly. That one, more often than not, is Charli, whom I lovingly refer to as the Devil Child. Seriously, she is all the awful that my other three girls weren’t. If that makes sense. It’s my comeuppance. Fo realz.

So imagine with me, as I am making these Bruschetta Mozzarella Bites, getting ready to tell you about this super cool Farm Rich Back Your Snack contest, and I am going back and forth between the kitchen and the table, where my photo setup is located. I turn my back for just a moment and then this happens…

When I was all done with everything, I had only one tomato left, and she snatched that one too, even though there was still perfectly good bruschetta left in the bowl. She doesn’t like things that are actually hers, only things that she knows are NOT hers. The jerk.

Le sigh.

So, back to these bruschetta mozzarella bites.

Bruschetta Mozzarella Bites | asimplepantry.comBruschetta Mozzarella Bites | asimplepantry.comThis is literally the hostess’s (hostesses? hostess’? ugh, grammar you have slayed me) best friend, because this app has very few ingredients and whips up, literally, in minutes. ZOMG. Using some Farm Rich Mozzarella Bites, I cooked them up, then just topped them with my perfectly delicious tomato and basil mixture for the best little snack hack around!

Bruschetta Mozzarella Bites

Ingredients

  • 1 Box 19.2 oz Farm Rich Mozzarella Bites
  • 2 Large Tomatoes diced
  • ½ C Fresh Basil roughly chopped
  • 2 tsp Olive Oil
  • Pinch of Kosher Salt
  • Dash of Cracked Black Pepper
  • ¼ C Balsamic Reduction for drizzling

Instructions

  • Preheat oven to 375 degrees. Place all the mozzarella bites on a large cookie sheet* and bake for 12-13 minutes. Remove from oven.
  • While the mozzarella bites are baking, gently mix together the diced tomatoes, chopped basil, salt, pepper, and olive oil.
  • Top each mozzarella bite with a couple teaspoons of the tomato basil mixture, then drizzle with balsamic reduction and enjoy!

Notes

*Depending on the size of your oven and cookie sheets, it might be necessary to bake in batches. I personally used two cookie sheets and placed them length-wise on the middle rack. Snug fit, but it worked!
