Easy Mustard Salmon with Citrus Squash Salad

Making Easter Easier

Every year, Rudy makes a commitment to go without beef, chicken, and pork for Lent. This time provides a lot of opportunities to create meals that we don’t normally prepare, and it can be a lot of fun.

If there is one aspect we always focus on, it’s getting dinner quickly, without sacrificing flavor. This mustard salmon gets the job done and is worth every bite!

How to Make Mustard Salmon

Like my pistachio-crusted chicken, this recipe features a delicious Maille (pronounced “MY”) Mustard! For this salmon, we went with the signature Maille Old Style Mustard.

  • The crisp, whole seeds create a crispy crust on the baked salmon, for a pleasing flavor and texture
  • Gluten-free and kosher, Maille Old Style Mustard is perfect for those with dietary restrictions
  • Just spread a thin layer over the salmon and pop in the oven, that’s it!

Citrus Squash Salad

I love balanced flavors, so I decided to pair this punchy salmon with a tangy, citrusy raw squash salad.

  • Use a mandoline to very thinly slice zucchini and squash
  • Toss in cherry or grape tomatoes
  • Coat with a honeyed lemon dressing
  • Sprinkle with chopped pistachios and chives

The salad can be prepped in advanced without the dressing or put together while the salmon bakes in the oven, no time wasted!

Ingredients

  • 2 lbs salmon
  • 2 teaspoons Maille® Old Style Mustard
  • 3 cups zucchini sliced thin
  • 1.5 cups yellow squash sliced thin
  • 1 pint cherry tomatoes halved
  • ¼ cup fresh chives minced
  • ¼ cup pistachios chopped
  • ¼ cup extra virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon lemon zest
  • 1 lemon juiced
  • kosher salt to taste
  • cracked black pepper to taste

Instructions

  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and spray with a light layer of cooking spray. Add the salmon filet, skin-side down and coat with the Maille Old Style Mustard. Bake for 15-20 minutes, or until the fish flakes with a gentle twist of a fork.
  • While the salmon bakes, add the zucchini, squash, tomatoes, chives, and pistachios to a large bowl. Whisk together the olive oil, honey, lemon zest, lemon juice, salt, and pepper in a small bowl, then slowly add to the bowl with the salad. Toss gently to coat and adjust dressing and seasoning as desired. Plate salmon with a hearty portion of salad and serve immediately.
