You will find few meals faster, easier, or tastier to make than Ham Ranchero. And versatile too! It’s great for dinner, but throw in some eggs and you’ve got an instant breakfast. Hallelujah! Perfect for the day after a big holiday meal, just toss that leftover ham in a skillet with some serrano peppers, cilantro, RO*TEL, and Hunt’s Tomato Sauce and you’re golden.

Put that leftover ham to good use in this versatile and easy Ham Ranchero dish! Ready to eat in under 20 minutes!

Ingredients
- 2 Tbsp Canola Oil
- 1 1/2 lbs Ham, sliced thin and diced
- 2 Serrano Peppers, sliced thin
- 1/2 C Fresh Cilantro, roughly chopped
- 2 tsp Garlic Powder
- 1 1/2 tsp Cumin
- Cracked Pepper, to taste
- Kosher Salt, to taste
- 1 Can (10 oz) RO*TEL
- 1/4 C Hunt's Tomato Sauce
Instructions
- Heat the oil in a large skillet over medium, medium-high heat. Add the ham, peppers, and cilantro and cook, stirring occasionally, until the ham begins to brown, around 7 minutes.
- Add the garlic powder, cumin, salt and pepper and stir gently to combine. Pour in the RO*TEL, and tomato sauce, stir, and let sit for 5-10 minutes, or until all the water has been absorbed or boiled off. Serve with warm tortillas, avocado, and extra cilantro and enjoy.
This dish is a crowd-pleaser because it’s easy to adjust the heat by using more or less peppers. I am always down the serrano peppers because I swear they are always a surprise. Sometimes they are mild, and sometimes they have a wicked burn that leaves me begging for some milk.
If you watch me on Snapchat (@asimplepantry), then you probably saw when I visited a little taqueria on the Southside where I pretty much died because the salsa was so insanely hot. And then, AND THEN. My husband asked me to try the salsa verde and said it wasn’t as hot as the salsa roja and HE LIED. I had to stop at a convenience store and drown my mouth in a sugary energy drink to stave off the burn.
Oh was I ever mad!
I love breaking out the Hunt’s and RO*TEL for easy recipes like this. It cuts down on the prep time and you know I always have some on hand. I mean, who doesn’t? They are pantry essentials, yo. There should always be a couple cans in every pantry. Always. And when I’m running low on supplies, I head out to my local Walmart to pick up more! Pretty sure I’m stocked like disaster prep, and I thank my mom for that (she has like…seven of everything, and it’s never intentional). My cupboards’ hinges cry.
