We’ve been on-the-go so much lately, I feel like I have been living the fast food life, and I do not like it one bit!

Since being inspired by the HEB Slim Down Showdown, I’ve been working on getting back in shape. It’s not an easy thing when you’re my size, with my various medical conditions. But there are definitely things I can do, that I have not been doing.

Since I’m always on the go, I’m taking my LALA® Yogurt Smoothies with me, as well as these super simple, super sweet, no bake energy bites. I can pop them in a baggie and stow them in my purse, then eat one when I need a bit more energy, so I’m not noshing on a bag of chips. The HEB Slim Down Showdown would not look too fondly on that.

The HEB Slim Down Showdown is a 12-week competition with 28 partners and community members, with huge prizes and all sorts of education and tools to conquer unhealthy habits. Since it began seven years ago, more than 6000 pounds have been lost by participants.

Simply Sweet No Bake Energy Bites

Ingredients

  • 6 Medjool Dates pitted
  • 2 Tbsp Dried Cranberries
  • ½ C Walnuts
  • ¼ C Rolled Oats
  • 1 tsp Chia Seeds
  • 1 tsp Honey

Instructions

  • Add the Medjool dates to a medium-sized food processor and pulse until a sticky paste forms. Add the remaining ingredients and continue pulsing until a fine, crumbly mixture forms.
  • Scoop mixture and roll into 10 uniform balls. Enjoy immediately, or store in an air-tight container at room temperature for up to one week.
