Spicy Cilantro Lime Popcorn for Snacking

You guys, I don’t know what’s going on. It is SO crazy around here, first week of school and all that. I was super nervous because today Afton took the bus for the first time, and all by herself. I was certain she would end up at the wrong school, or kidnapped, or lost and scared. But nope, she was fine and I’m just paranoid. So yay for that! But amid all the craziness, you can find me snacking on some delicious Skinnygirl popcorn that I picked up at Walmart, either by its awesome self, or dressed up to party like my spicy cilantro lime popcorn, with some fresh salsa and queso for dipping. Who needs chips? Not this girl.

I have to admit, I am kind of obsessed here. Between their new Butter & Sea Salt, and Salt & Lime flavors, I don’t think I could pick a favorite. These mini bags are packed with flavor and come in with at least 20% fewer calories than their competitors, which is win central in my book. And with no artificial flavors, colors, or sweeteners, and no high fructose corn syrup, I really feel like I’m enjoying a better for you snack, and I ain’t got no problems with that.

Word.

Just look at those beautiful, fluffy kernels. Can you hear them calling out to you? Because I can…

I will neither confirm nor deny that I just popped myself a bag of Salt & Lime Skinnygirl Popcorn right now.
Yeah, I totally did. Snacking, FTW.

I had a lot of fun dressing up the Salt & Lime popcorn, because it has the perfect base for some Mexican styling with its light lime flavor and just a touch of saltiness. Perfect with some cayenne pepper, garlic, cumin, and cilantro, this combo will have you dreaming about a margarita, because duh, it’s a party. At my house. Come now.

And instead of having chips and dip, I love to indulge in popcorn and dip instead. Seriously. Have you ever dipped popcorn in fresh salsa or hot queso? It’s amazing. Spicy Cilantro Lime Popcorn by A Simple Pantry

Spicy Cilantro Lime Popcorn with Fresh Salsa and Queso Dips

Ingredients

For the Popcorn

  • 2 Bags Skinnygirl Salt & Lime Popcorn
  • 2 tsp. Garlic Powder
  • ½ tsp. Cayenne Pepper
  • ½ tsp. Cumin
  • ½ C Cilantro Gently Torn

For the Salsa

  • 2 Medium Tomatoes Seeded
  • ¼ Red Onion Sliced
  • ½ Serrano Pepper
  • 2 Cloves Garlic Peeled
  • Handful of Cilantro
  • 1 tsp. Kosher Salt
  • Juice from ¼ Lime

For the Queso

  • ½ C Fresh Salsa
  • 2 C Self-Stable Brick Cheese

Instructions

For the Popcorn

  • Pop each bag of popcorn according to the instructions on the package. Pour the popcorn into a large bag or container with lid, add the seasoning and cilantro, seal, and then shake vigorously. Pour into bowls and serve.

For the Salsa

  • Add all the ingredients into a large food processor and pulse until thoroughly combined.

For the Queso

  • Add the cheese and salsa to a small pot and heat on low until the cheese is completely melted.
