Mini Taco Pizzas After School Snacks

Oh man. School is in session. My babies are in school. And I am fuh-reeeeeaking out. Seriously! Afton is in full day Kindergarten and Delaney is in Pre-K and Vivienne is in Preschool. So much madness, I swear. Also, I had developed this really bad habit of going to bed between 2 and 3 am, which is not conducive to a 6am wakeup. To say I feel like a zombie would be an understatement. Pretty sure I scared other, smaller children today. But on that note, it’s a celebration, cause yay school! The kids have been anxiously awaiting this day for a long time now, and what better way to get in some fun together time than to make a big batch of mini taco pizzas and enjoy some after school snacks!

I had originally planned on making this awesome mini casserole dish using some Bagel Bites and Delimex, but my test batches just did not come out the way I wanted them too, which was sad, but that’s life. But in the meantime, I had this flash of genius, because growing up, I would always go eat this amazing taco pizza from a local pizza joint in my hometown. It was so delicious, and honestly, I would never get a taco pizza from anywhere else. I thought, how cool would it be to make something like that for the girls? Share a bit of my childhood with them?! So I set out to make something worthy of my memories, and man, did I ever nail it.

Mini Taco Pizzas by Three in Three

Mini Taco Pizzas

Ingredients

  • Three Cheese Bagel Bites
  • ¼ lb. Ground Beef
  • 2 tsp. Taco Seasoning
  • ¼ C Taco Sauce
  • ¼ C Shredded Lettuce
  • ¼ C Shredded Cheese
  • ½ Small Tomato Diced
  • Avocado for Garnish

Instructions

  • In a small skillet on medium-high heat, add the ground beef and seasoning and brown until the meat is cooked through completely and no longer pink, around 5 minutes. Drain the excess fat.
  • Prepare the Bagel Bites as directed on the package, via either the microwave or oven.
  • Top each Bagel Bite with a spoonful of meat, then drizzle with a tsp. of taco sauce before adding a pinch of shredded lettuce, cheese, and tomato.
  • Garnish with sliced avocado and serve warm.

I served up my mini taco pizzas with a side of delicious Delimex, and the kids quickly annihilated their snack, because busy, learning bodies need good fuel! And I love that Bagel Bites is made with real cheese and homemade sauce. Plus it contains 0 grams trans fat. Hello awesome?
