Tomato Florentine Bread Bowl Soup

I try to make everything at home as often as possible, but there are definitely days when I’d rather do anything but. Days when I’ve been running around like a headless chicken, uncooperative children, animal messes, laundry to the ceiling, and not enough time to even use the bathroom. Ugh. I know I’m not the only one to have days like that, right?

But even on the worst of days, I don’t want to just sit down to a TV dinner and call it done. Boring. Unsatisfying. I want something delicious that will leave me feeling happy, and remind me that the day is almost done and everything will be OK. I really need those reminders. I hit up Walmart the other day and picked up some goodies to make a tomato florentine bread bowl soup and it really hit the spot when I needed it.

I grabbed a can of Progresso Tomato Florentine and Italian Sausage Soup and added some fresh, fragrant rosemary and basil from Walmart‘s Marketside for a fun, flavorful twist on the soup. I also picked up a Neo-Tuscan bread loaf from the bakery to make my bread bowl (and I totally had a blast eating the insides with some olive oil, yum), and some fresh mozzarella pearls to garnish. It took no time at all to create my tomato florentine bread bowl soup and when I sat down to enjoy the fruits of my labor, I was rewarded with an enormous amount of amazing flavor.

Who knew soup could be so awesome?

I kind of want to eat soup every day when I have it like this. Comfort food, fancy-fied. Word.

    We do quite a bit of progresso soup in this house but in all the years, I’ve never thought to put it in a bread bowl like that! You’re brilliant!
