Turkey Casserole Thanksgiving Leftovers Meal

This year I am in charge of the one of the two turkeys for Thanksgiving. There will be somewhere in the neighborhood of 25 people at dinner, so there will be a lot of food. Which means a lot of leftovers. Which means seemingly endless days of containers being scraped out, food reheated, put back in the fridge, rinse and repeat. Orrrrrrrrrr you could just make this Turkey Casserole and make a single Thanksgiving leftovers meal that will make everyone happy without having a week’s worth of Thanksgiving overkill in the fridge!

This turkey casserole really is the perfect way to use up those traditional Thanksgiving staples like stuffing, mashed potatoes, cranberry sauce and turkey. The big secret to this dish, however, is the Hellmann’s® Real Mayonnaise. You mix some up with the cranberry sauce and the potatoes and you get a tasty creamy dish that will have everyone, who doesn’t have leftovers, super jealous.

My husband was sooooo upset when I made this, because he totally forgot I was doing it and instead made himself and girls some hot dogs wrapped in corn tortillas and fried, with mac and cheese and green beans on the side. But you know what? That’s the beauty of this dish! It’s already filled with leftovers, so it makes great leftovers itself. It’ll get gobbled up with the quickness, because I’m not letting anyone forget today. Of course, it didn’t stop me from eating a healthy potion after I finished taking my photos.
