It really doesn’t matter if you love or hate chicken salad. I’ve always been a strict hater, myself. Weird ingredients, too much wetness, and grapes? What? That just sounds awful. But these Balsamic Chicken Salad Sandwiches are the reprieve from those ugly chicken salads of the past. With simple ingredients like apples, cranberries, and walnuts, you know the flavors go together like they should.
The dressing itself is light, meaning, there isn’t ten tons of it. Just enough to cover everything, so you aren’t eating whole globs of mayonnaise. That is never a fun experience. In the end, you have a wonderfully light and delicious balsamic chicken salad, full of more flavor than you can shake a stick at, and when served on a bun (like my pretzel rolls, minus the bacon and cheddar), they are heavenly lunch, dinner, or meal-on-the-go.
