In terms of quick meals, chicken is tops. Whether you’re making a meal like chicken satay, or a strawberry salad, few things are easier.
For me, it really doesn’t matter if you love or hate chicken salad. I’ve always been a strict hater, myself. Weird ingredients, too much wetness, and grapes? What? That just sounds awful.
But these Balsamic Chicken Salad Sandwiches are the reprieve from those ugly chicken salads of the past. With simple ingredients like apples, cranberries, and walnuts, you know the flavors go together like they should.
Also, you also don’t have to worry about weird textures. No exploding bits of grape, ew. Just crunchy walnuts, crisp green apples, chewy cranberries, and salty feta cheese.
If you’re a meal planner, you’re probably squealing with delight, because really, the only prep for this dish is the chicken. You can cut up a rotisserie and be just fine, or quick grill some tenders and dice. That stuff is ready in minutes!
It makes my heart happy.
It also makes my watch happy, cause I save sooooooo much time when I make this. I guess I should say my phone, because I haven’t worn a watch in years. My phone is my watch. So it makes my phone happy? Hmm…
The dressing itself is light, meaning, there isn’t ten tons of it. Just enough to cover everything, so you aren’t eating whole globs of mayonnaise. That is never a fun experience. In the end, you have a wonderfully light and delicious balsamic chicken salad, full of more flavor than you can shake a stick at, and when served on a bun (like my pretzel rolls, minus the bacon and cheddar), they are heavenly lunch, dinner, or meal-on-the-go.
