For me, it really doesn’t matter if you love or hate chicken salad. I’ve always been a strict hater, myself. Weird ingredients, too much wetness, and grapes? What? That just sounds awful.

But these Balsamic Chicken Salad Sandwiches are the reprieve from those ugly chicken salads of the past. With simple ingredients like apples, cranberries, and walnuts, you know the flavors go together like they should.

Also, you also don’t have to worry about weird textures. No exploding bits of grape, ew. Just crunchy walnuts, crisp green apples, chewy cranberries, and salty feta cheese.

Balsamic Chicken Salad Sandwiches

Ingredients

  • 1 lb Grilled Chicken Breast cubed
  • 1 Large Granny Smith Apple cubed
  • 1 C Dried Cranberries
  • ¾ C Crumbled Feta Cheese
  • ¾ C Honey-Glazed Walnuts
  • ½ Small Red Onion fine diced
  • ½ C Mayonnaise
  • 2 Tbsp White Balsamic Vinegar
  • 1 Tbsp Sugar
  • Kosher Salt to taste
  • Cracked Pepper to taste
  • 8 Pretzel Rolls

Instructions

  • In a large bowl, mix together the chicken, apples, cranberries, feta, walnuts, and red onion. Set aside.
  • In a smaller bowl, whisk together the mayonnaise, vinegar, sugar, salt, and pepper. Adjust seasoning as needed.
  • Pour the dressing into the larger bowl and mix thoroughly to combine. Divide between pretzel rolls and serve immediately.
