Bruschetta Pasta With Balsamic Drizzle

I may be the wife and mother to a house full of Mexicans, but my true food love lies with those wonderful Italians and their amazing pasta dishes. Maybe it’s because I was raised in rural Minnesota, where Mexican food was a watered-down version of Tex-Mex brought to us yearly with the shifting tides of migrant workers. We didn’t get a real Mexican restaurant until I was a teenager! So in the meantime, between traditional Midwestern dishes, I often found myself enjoying pasta, pasta, and more pasta. Today I’m sharing my love for Italian cuisine in the form of Bruschetta Pasta with Balsamic Drizzle.

This dish features flavorful yellow tomatoes and fresh basil, with a delightful drizzle of balsamic reduction adding the perfect amount of sweetness to compliment the savory saltiness of the feta cheese. Although this bruschetta pasta with balsamic drizzle is healthy and light, it is also deliciously addictive. Just try to pass on seconds, I dare you.

    I love that you used yellow tomatoes they seem a little less acidic than others and it just adds more color to the dish. Have a great day!
