You guys. I am so glad I decided to whip up this dip at night, after the kids were all in bed. Why? Because I didn’t have to share it! Bwah ha ha. I mean, more often than not, when I make a recipe, I get to have a taste or two, and then the kids devour it, and by devour I mean inhale. Where does all that food even go?
I dunno, man.
But this Greek Feta Dip is so lusciously creamy, and balanced off perfectly with petite diced Greek veggies and consumed with crispy, crunchy pita chips…I don’t even know where I was going with that sentence because I started drooling and got distracted by the reminder that I have more in the fridge and want to eat it nownownow. But I just ate breakfast, so I will abstain, like a good Karly.
I hate being good, wah.
Everyone loves my Greek Salad (not a #humblebrag), which is my usual go-to for a party setting, but I wanted to branch out and try something different. Still leaning on those delicious Greek flavors, I employed the help of a little bit of Lipton® Recipe Secrets® Onion Mix to make this insanely amazing Greek feta dip. I am about to get distracted again…
OK I’m back. SO. What I really really really love about this dip is that it whips up in just minutes. There is no cooking required. You need a blender, or mixer, or a potato masher and some elbow grease to this dip properly mixed. If it’s not properly mixed you will come back here and tell me I have done lost my damn mind. Trust me. After ten taste tests while mixing, it is very apparent that tasting shouldn’t occur until you are 100% certain it is thoroughly mixed. Otherwise you get a mouthful of plain cream cheese, or mayo, and it’s very jarring. This dip isn’t jarring. It’s delicious.
The reason you need a blender or mixer or something is because the feta takes a little strength to mash up and fully incorporate into the dip. I have wimpy arm strength in my good arm because of the tumor, so I went straight to the blender. It was done in like two minutes. Then I added the Lipton® Recipe Secrets® Onion Mix and my other seasonings, stirred it up really well, then plopped it in a bowl and chowed. This dip is perfect for game day, you guys. No hassle, on the table fast, no missing important plays!
Greek Feta Dip
- Add the mayonnaise, cream cheese, and feta to a blender or mixing bowl and blend until thoroughly combined and smooth. Small lumps may be present, but large ones should be completely broken down. Stir in the oregano and onion mix until combined, then adjust seasoning with salt and pepper as needed.
- Add the tomato, cucumber, and red onion to a medium bowl and toss with the olive oil and salt and pepper to taste. Dump the vegetables on top of the dip and serve with pita chips. Enjoy!
