If there is one thing you need to know about my kids as a whole, it’s that they are hardcore Nickelodeon fans. Whether it’s Spongebob, The Thundermans, or reruns of iCarly, these kids love themselves some Nick, and you just know that when they’re all in another room playing, I won’t even bother changing the channel. I’ve got some Nick love, too. We’re getting ready for the Kids’ Choice Awards around here, and while I picked up a couple 30 packs of Capri Sun Roarin’ Waters to enjoy the show with, we need a great snack too. Say hellllloooooooo to this amazing Churro Popcorn!
We treat our TV time like we’re at a theater, so I thought it would be the perfect opportunity to break out some delicious popcorn, and spice it up with a fun, Mexican-inspired flavor combination, you know, because my kids are little Mexicaners, as my husband calls them. We love bringing Mexican flavors into the house in new ways, and this recipe was definitely a hit!
When having such treats, I really like breaking out the Capri Sun Roarin’ Waters because it’s a lightly flavored water beverage, and at only 30 calories, with no artificial colors or flavors, I can feel good about giving them to the girls, especially while watching the Kid’s Choice Awards.
When it comes to making some churro popcorn, I do everything on the stove top. OK, so you could make this using the microwave, but I do not own a microwave, so stove top it is. Add a tablespoon of oil to the bottom of a 2-qt saucepan and heat over medium-high, then add the popcorn kernels, cover, and gently shake until all the kernels have popped. Pour into a large bowl, coat with a mixture of butter and vanilla almond bark, then add the sugar seasonings and stir until coated completely and enjoy! Much yum!

Ingredients
- 1 Tbsp Canola Oil
- ยฝ C Popcorn Kernels
- 4 Tbsp Butter
- 1 C Vanilla Almond Bark
- ยฝ C Powdered Sugar
- ยผ C White Granulated Sugar
- 2 ยฝ Tbsp Cinnamon
- 1 tsp Allspice
Instructions
- In a small bowl, combine the powdered sugar, granulated sugar, cinnamon and allspice. Set aside.
- In a 2-qt saucepan, heat the oil over medium-high. Once hot, add the popcorn kernels, cover, and gently shake until all the popcorn kernels have popped. Dump into a large bowl and set aside.
- In a small saucepan, add the butter and vanilla almond bark and heat over low until melted, stirring frequently. Pour into the large bowl with the popcorn and very gently fold with a spatula until the popcorn is thoroughly coated, being careful not to break the popcorn too much. Once coated, sprinkle with the spiced sugar mixture and continue to fold until all the popcorn is coated. Serve immediately, or store in an airtight container for up to three days.
