Oh fall, how I have missed you, like I’ve missed this Pumpkin Spice Horchata Latte.
Fall is an elusive season when you live in Phoenix, and San Antonio. But here in Owatonna? I relish having the windows open 24/7, and waking up needing to wrap myself further into thick quilts and comforters. It’s amazing.
We still have some hot days up here, usually accompanied by large thunderstorms, which always gets my blood going. If you didn’t know it already, I am kind of a weather FREAK. Love it so much.
So on those hot days, those Indian Summer days, I tend to throw some ice in that latte, to save my sanity, of course.

Steps to Develop your Tasting Skills
SMELL|| Always smell your coffee before tasting it. Your mouth distinguishes only four tastes: salty, sweet, bitter and sour, but your nose can detect thousands of aromas.
SLURP|| When tasting a coffee, it’s important to slurp it. This sprays the coffee across your palate and lets the subtle flavors reach all the different tasting zones of your mouth.
LOCATE|| Consider the coffee’s weight and feel in your mouth. Where are you experiencing the flavors? On your tongue?
DESCRIBE|| Think about how you would describe your coffee tasting experience. Which words would you use to characterize the aroma, flavor and how the coffee feels in your mouth? What other food flavors or aromas can you compare to the coffee?
So much to think about! Thankfully Starbucks has some fine coffee to enjoy at home, eh?
I love that I can have such a fragrant and tasty Pumpkin Spice Horchata Latte at home. Have you ever made your own horchata before??? It’s kind of awesome.
It’s more than just rice in water. For a truly authentic experience, you have to use almonds as well, and you have to let everything soak overnight. It sounds complicated, but really, it’s super easy. It just takes awhile to soak.
I love using horchata in my lattes instead of traditional milk because there is so much delicious flavor to be had. I hope you give it a try too. Your coffee will thank you.

Ingredients
For the Horchata
- 1 C Uncooked Long-Grain White Rice
- 3 C Blanched Almonds
- 3 Cinnamon Sticks
- 10 C Water divided
- 1 C Concentrated Simple Syrup 2 parts sugar, 1 part water
For the Pumpkin Spice Horchata Latte
- 4 oz Brewed Starbucks Fall Blend
- Pinch of Ginger
- Pinch of Nutmeg
- 4 oz Horchata
Instructions
For the Horchata
- Heat half of the water to boiling and set aside.
- In a blender, add the rice and almonds and blend until a fine powder. This may need to be done in batches, depending on the strength of the blender. Add the powder to a large, heat-proof container, then pour the hot water over top. Stir to combine, then add the cinnamon sticks and stir once more.
- Allow the mixture to cool to room temperature, then seal and let sit on the counter for 8-10 hours.
- Discard cinnamon sticks. Place contents back into the blender, in batches, and blend until smooth. Strain the mixture through a triple layer of cheesecloth and discard the pulp. Throw the liquid back into a blender with the remaining 5 cups of water, again working in batches, and blend until smooth. Slowly stir in the simple syrup until desired sweetness is reached. Keep refrigerated.
For the Pumpkin Spice Horchata Latte
- Brew the Starbucks Fall Blend as desired, then add to a large coffee cup. Add the ginger and nutmeg and stir until dissolved, then add the horchata and stir once more. Serve immediately.
