We’ve talked about soup a lot this year, from my white bean soup to my Moroccan-spiced parsnip soup, and now with this sausage and bell pepper soup, there is something for everyone!

Get ready to tickle those tastebuds, my friends.

If you looked in our pantry at any moment in time, you’d find at least three bags of No Yolks noodles, most likely in the Extra Broad, Dumplings, and Kluski style. Did you know they have no cholesterol and are the #1 selling noodle in the US and Canada? They’re delicious!

I had a hard time deciding which particular No Yolks noodles I wanted to use in this recipe, so I’ve tried both the Dumplings and Kluski noodles. You could easily use either, depending on your mood!

Squiggly, or straight? BOOM, dinner done.

It felt so weird since almost all of my brothy soups have some form of tomato in them (I’m looking at you, white bean, enchilada, stuffed pepper, and tortilla soup). I thought no way, no way this could taste good without tomatoes.

But tomato-haters can rejoice because this brothy soup tastes like heaven without tomatoes! Yay!

The bold seasonings and Italian sausage really pack a flavorful punch to this soup, which the bell pepper and onion add a pleasing crunch. The chewy No Yolks egg noodles are the metaphorical icing on the cake.

How do I turn that into a soup metaphor? They are the noodles in the soup?!

I know, I know, I am not very funny.

Ingredients

  • 1 lb. ground Italian sausage
  • 2 cups sweet yellow onion diced
  • 2 cups red bell pepper diced
  • 5 garlic cloves minced
  • 1 tablespoon kosher salt
  • 1 tablespoon Italian seasoning
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 12 oz package No Yolks Kluski or Dumplings noodles
  • 10 cups low sodium chicken broth
  • 2 cups fresh spinach chopped

Instructions

  • In a large pot over medium heat, brown the italian sausage, breaking it into little pieces as it cooks. When sausage is ¾ cooked, add the onion and red pepper and continue cooking until the sausage is no longer pink, then add the garlic and cook for one minute, or until fragrant.
  • Stir in the seasonings, then add the No Yolks noodles of choice. Carefully add the chicken broth and stir to combine. Bring the pot to a full boil, then reduce to a simmer and cook for 15-20 minutes, or until the noodles are cooked. Stir in the spinach and serve hot.

    This one is a favorite in our house. I made it when my mom came to visit, and now it’s a favorite in her house, too! We have both made it for potlucks, and it is a huge hit. Definitely recommend this one!
