Taco Tuesday Taco Party!

While Tuesday may be synonymous with tacos, it doesn’t have to be Tuesday to get your taco party on!

Whether you’re digging into these thrilling pineapple beef tacos, or my chipotle shredded beef, pork carnitas, or corn chimichurri tacos, there is not a day that you can’t just have a taco.

Thankfully, no matter what taco you might be making, if you have some Cacique® on hand, you’re golden!

Today we’re using both the Cacique Queso Fresco, my absolutely faaaaaaaaavorite to balance robust dishes, as well as their Cilantro Lime Sour Cream! So how about we get our Taco Party on, eh?

What’s In This Beef Taco Recipe?

You know I like to keep things simple around here, so you can expect that much from this 30-minute meal as well!

  • poblano peppers
  • canned pineapple
  • roma tomatoes
  • cilantro
  • red onion
  • spices
  • lime juice

That’s all you need to make the beef crumble and salsa!

What Are The Spices Used?

You know I like to whip up my taco seasoning, and this one is very similar to my basic beef taco recipe.

  • ground cumin
  • chili powder
  • garlic powder
  • ground coriander
  • salt
  • pepper

You’ll be hard-pressed to find a better taco seasoning, I promise!

Toppings Are King

In all truth, tacos aren’t much without the garnishes. They are pretty much what makes a taco, a taco.

You know, other than being inside a tortilla.

That is why I love to set out tons of little bowls of all the garnishes imaginable!

  • pineapple poblano salsa
  • Cacique Queso Fresco
  • Cacique Cilantro Lime Flavored Sour Cream
  • torn cilantro
  • flaky sea salt
  • hot sauce
  • lime wedges
  • etc, etc, etc…

Pineapple Beef Taco Recipe with Poblano Salsa

Ingredients

  • 1 red onion finely diced, divided
  • 2 large poblano peppers seeded and diced, divided
  • 4 roma tomatoes seeded and diced
  • ½ cup cilantro roughly chopped
  • 1 8 oz can pineapple tidbits in pineapple juice drained and juice reserved
  • 1 lime sliced into wedges
  • 1 tablespoon canola oil
  • kosher salt to taste
  • fresh cracked pepper to taste
  • 24 oz lean ground beef
  • 12 tortillas
  • 1 cup Cacique Queso Fresco
  • ¾ cup Cacique Cilantro Lime Sour Cream

Taco Seasoning

  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoons kosher salt
  • â…› teaspoon fresh cracked pepper
US Customary - Metric

Instructions

  • In a small dish, combine taco seasoning spices and mix until uniform, set aside.
  • In a medium-sized bowl, combine 3 tablespoons of the diced onion, ¾ cup diced poblano, diced tomatoes, cilantro, pineapple, and a hearty squeeze of lime juice. Toss gently to combine and set aside.
  • Heat canola oil in a large skillet over medium-high heat. Add the remaining onion and poblano, season with salt, pepper, and half of the taco seasoning, and cook until lightly softened, about 3 minutes.
  • Add the ground beef to the pan and continue to cook, crumbling the beef as it cooks. Sprinkle with remaining taco spices and cook until no longer pink, about 5 minutes. Stir in the reserved pineapple juice and cook until most of the liquid has burned off, about 3 minutes. Adjust seasoning as desired and remove pan from heat.
  • Divide meat between tortillas and top with pineapple poblano salsa, Cacique Queso Fresco and Cilantro Lime Sour Cream. Enjoy!
